It’s probably a vegan rite of passage to make this.
- Tofu, usually firm (but firm silken works too)
- Vegan mayonnaise
- Anything else you want
- Roughly chop the tofu. If it’s particularly firm, you can crumble it with your fingers.
- Add enough vegan mayonnaise to get the desired consistency.
- Add anything else you want.
Go nuts! This is literally the most customisable thing ever. The tofu is pretty flavourless, so unless you just want to be tasting your mayo, you’ll be wanting to add in other things - I added in a squeeze of lemon juice, minced garlic, nutritional yeast, and salt. Other suggestions include mustard, spanish onion, celery, carrots, spring onions, apple, raisins, gherkins, capers, sugar, relish, turmeric (for ‘egg’ yolk!), other herbs, other spices…
Try apple, raisings, and a dash of sugar for a sweeter egg salad, or turmeric, paprika, mustard, curry powder, onion, and garlic for a warming one, or celery, gherkins, capers, and fresh herbs for a summery one!
